A charming heritage building that was once home to Paramount Picture Studios now houses the Paramount House Hotel. Recently repurposed and refurbished by Melbourne-based Breathe Architecture, the building is crowned with a substantial addition that ties together past and present. Its location in the inner suburb of Surry Hills is gritty and cosmopolitan, and these characteristics are brought to life through the rustic yet cosy interiors. Good coffee and a substantial breakfast are on offer downstairs at the Paramount Coffee Project.
